Hey, I would just like to encourage everyone to take a quick visit over to http://www.tampontification.com/donate.php . All it takes is a couple quick clicks, and they will donate a box of organic cotton tampons or chlorine-free pads to a women’s shelter in your state. Most shelters don’t get these basic products included in their budget, and the women in the shelters frequently can’t afford them. Take just a few minutes to help, and tell your friends too. :)

Yep, that’s right, we are getting our first house! This means I’ll have a LOT of cool pics to share on here, as I’m sure I’ll be putting my craftiness to work on this new house. We will probably move in the end of February (that’s a guess). I am so excited!

Couscous with Spinach and Garlic January 5, 2007

Well, I just posted this in my other blog yesterday, and figured it would be a great way to kick off the new blog.

Couscous with Spinach and Garlic
Makes 1 large serving or 2 small side servings. I can eat this for a small meal.
All measurements except dry couscous and water are approximate, and can be adjusted for taste.

2 Tbsp. olive oil
1 tsp. chopped or minced fresh garlic (you can buy a jar of this at the store, it goes in almost anything!)
1/2 c. water
1/2 c. fresh spinach leaves
1/3 c. dry couscous
grated parmesan cheese to taste

Heat the olive oil over medium heat until warm. Add garlic and stir frequently, for 2-3 minutes, until garlic gives off a REALLY yummy smell. :) Add water and bring just to a boil. Stir in spinach leaves until just wilted. Stir in dry couscous and remove from heat. Cover, and let stand for 5 minutes. Add as much parmesan cheese as you’d like and enjoy!

For less calories and fat, reduce olive oil to 1 Tbsp. or less. You can also reduce parmesan cheese
Calories: 513
Fat: 31.1 g
Cholesterol: 11 mg (from parmesan cheese)
Sodium: 264 mg (mostly from parmesan)
Total carbs: 45.3 g
Protein: 14.1 g
Calcium: 280.3 mg (spinach is good and high in calcium!)

This is a great recipe for something a little different. Spinach and garlic are super good for you, and a little olive oil in recipes actually gives you some of the good fat that you need.  Also, make sure not to overheat the oil before you put the garlic in, as it will break down if it’s overheated and lose its health benefits if it’s overheated. (Cook the food, not the oil) The garlic helps the bacteria in your intestines, relaxes your arteries, and can even help prevent cancer. Spinach is even better for your eyes than carrots! (Tell THAT to the next bunny you see eating a carrot).

Well, as lame as this may be, this is my first post. I’ll be using this blog to share things such as crafting, cooking, and all of my other miscellanious “hippie poser” pursuits. I just got a sewing machine for Christmas, so expect to see some sewing projects on here, as well as knitting and painting (although the painting is not really a primary hobby). I also love cooking, and trying to find healthy meals to serve my fiance, so I’ll be posting about some of the food stuff I come up with here. Don’t be surprised to find a recipe or a post about the health benefits of spinach sometime. Also, I am trying to find ways to minimize the ecological footprint I leave behind, so I’m sure there will be upcoming posts about the benefits of purchasing organic cotton or using a menstrual cup. I’m not entirely sure where this blog is headed as of yet, but I do promise that I’ll do my best to keep it entertaining. :)
